Happy Earth Day!

This day is impossible to ignore….especially living in a green place like Austin; not that I’d want to ignore it or anything.

A few “earth friendly” steps I take:

1. Turn off the water while brushing my teeth vs. allowing it to run the entire time to conserve water.

2. Using reusable bags at the store, just throw a few in the back seat or trunk. Some stores give discounts if you bring your own bag 🙂

3. Recycle plastic, paper, aluminum….luckily our complex provides a place at the “trash center” to recycle these items, making it easier.

4. Recycle gift wrapping and make your own with items from around the house, this is my favorite one!

5. All of our bills are online, we’ve gone paperless so we receive everything via email and we set up bill-pay through our bank!

These are the daily “earth friendly” efforts that have become habit now in my world. My next goal is to buy more items in bulk, first I need to make some space 🙂

Here are a few websites I’ve found with earth friendly ideas:

How green are you? Now excuse me while I go and hug a tree 🙂

Happy Earth Day!

Spring Break Weekend Photos….

All good things must come to an end, including Spring Break…..Overall, it was a good one and I’m very thankful to work for at a place that offers this long holiday 😀

So the name of the band we saw Saturday (see previous post, “Happy St. Patrick’s Day”) is called Mike Burns . They were fun to listen to & some of the songs sorda remind me of Damien Rice…they play this Saturday at Hotel Vegas,

You should go!

So during SXSW we saw another band, on Friday….you may have heard of them, The Counting Crows! They are amazingly talented, I would’ve paid to see them and this 2 hour outdoor show was FREE!!! The only way to do SXSW.

Ariel, our niece went with us….

Dave had fun grossing her out with his food on a stick!

It tastes like chicken….

We ended our weekend with a Sunday drive and a few stops

Miss Abbey in action

& one of Dave’s favorite past-times

The brisket was the best!

Some pretty wildflowers to brighten up our dining table, don’t worry we didn’t pick any bluebonnets!

Farewell Spring Break 2012 XOXO

Spring Break update & more to come!

Still going strong….this Spring Break continues to be a good one….there’s been productivity & tasty food

Here’s some more of my Spring Break 2012!

The “dreaded” switch-A-roo….of Fall/Winter wardrobe to Spring/Summer…so glad it’s taken care of, along with a little spring cleaning 😉

Spring Break just wouldn’t be complete without trying at least one new recipe….I’ve been looking forward to this one

(see below for recipe) & it was worth it, yum!

Baked Eggs

I found the recipe at La Buena Vida blog

Ingredients
4 eggs (2 per person)
1/2 of a jar of your favorite tomato sauce, 12oz
fresh thyme (any herb is a nice addition)
sea salt and pepper
mozzarella or parmesan

Method
Preheat oven to 375 degrees. In a baking dish, add a half of a jar of sauce, about one and half cups. The addition of mozzarella cheese is nice. Crack 4 eggs evenly spaced on top of the sauce. Season with sea salt and pepper. Sprinkle fresh herbs on top. Place in the oven and bake for 15-25 minutes, until preferred egg doneness. I like my yolks slightly cooked, but if you prefer them more runny, cook less. You want the whites to be firm and the sauce to bubble. Serve with toast and a nice green salad.

to be continued….I wish Spring Break wouldn’t end!

So far, so good

So far Spring Break has been low key, just what I need right now! Monday & Tuesday I spent time in San Antonio hanging out with Jen and her family. We enjoyed dinner here….

Here’s what we had…..

chicken stuffed poblano

cheese quesadillas in corn tortillas

chicken fajitas……..mmmmmmmm (Nick ya missed out)

& salt for EJ 😉

The main purpose of my visit was to celebrate Lily’s 5th birthday!

She had a great time and she’s such a cutie!!

On my way home from SA, I stopped by to meet Megan, Miles & Beth’s little lady…..such a doll!!

I really enjoyed my visit to San Antonio…..what else will Spring Break bring??

V-Day recap

As mentioned in yesterday’s post, our Valentine’s Day was a good one! We were able to relax and enjoy our time together. Dave always says how much Valentine’s Day is such a woman’s day so I wanted to make it extra special (& also cheesy 😀 ) for him.

I wrote little love notes and posted them in various places in our apt, at Dave’s eye-level of course

I wasn’t sure what to get Dave until I remembered our plans to go fishing on the coast in March for his birthday, so…..he stumbled upon this in his truck on Valentine’s Day morning and his vote’s in…..2 thumbs UP 😀 (it’s a tackle box with some tackle)

I really enjoyed creating the love notes and surprising Dave!

OOOOOHHHH WAIT!  I almost forgot the funniest part of the surprise….so Dave recently purchased some new hiking boots and decided he wanted some different laces for them, so I found a pair for him and made a cheesy note to go with it, BUT

………Abbey (this girl)

got her paws on his laces and chewed them up 😦 we think she was jealous because she’s all “tied” up in Dave’s love and that’s the only way she wants it……but she’s so cute so we laughed it off (the laces were like 2 bucks) and we will just have to get him another pair and keep them out of her sight.

David was very sweet to me and came by my office to surprise me with a unique arrangement of flowers….not the usual rose!

We ended our V-day with a lovely antipasto spread and took some silly pics goofing around…..

thanks for stopping by to visit our blog!!-xoxo

How Do I Love Thee, Let Me Count The Ways

Valentine’s Day is 1 week away….YAY for love and YAY for showing it!  I can’t help but love this cheesy day. It’s fun to bake something pretty and decorate too!  I haven’t decided on what to bake  or what to get my sweet valentine, suggestions??

While watching/listening to the Super Bowl on Sunday, I had fun making this:

I’ve seen these tassel garlands over the last few months on different websites and in magazines and found DIY instructions here– The Sweetest Occasion , it was a little time consuming but worth the trouble for the cuteness!!

Here are a few other fun V-day decorations and goodies, I LOVE LOVE!!

A string of heart shaped lights

Some sweet home-made Valentines for my sister and nieces

Our front door decor

A heart shaped bowl filled with bubblegum balls
